ONE COMPARTMENT OF REAR THREE COMPARTMENT SINK CLOGGED WITH DEBRI AND ALSO EXPOSED SINK IN THAT AREA; UNCLOG AND MAINTAIN SINKS. BOTH DRAINED SLOWLY.
CLEAN BOTTOMS OF PREP TABLES WHERE NEEDED.
CLEAN THE FOLLOWING AND MAINTAIN: DUST ON VENTS ABOVE COOKING EQUIPMENT, BOTTOMS OF DEEP FRYERS TO REMOVE GREASE.
CLEAN FLOORS UNDER CORNERS OF KITCHEN EQUIPMENT TO REMOVE PARTICLES/DUST. REPLACE CRACKED FLOOR TILE IN REAR PREP AREA UNDER DOUGH PREP MACHINE. CLEAN FLOORS IN REAR WALKIN COOLER. CLEAN FLOORS UNDER SODA STORAGE SHELVES IN REAR STORAGE ROOM.
REMOVE DUST FROM CEILING VENTS AND SOME LIGHT SHIELDS IN FRONT AND REAR PREP AREAS. REMOVE DUST FROM CEILING FANS IN WOMENS AND REAR PREP AREA WASHROOM.
All food not stored in the original container shall be stored in properly labeled containers. LABEL ALL FOODS NOT IN THE ORIGINAL CONTAINERS.
The flow of air discharged from kitchen fans shall always be through a duct to a point above the roofline. DETAIL VENT HOOD OVER PIZZA OVENS.
Containers and utensils shall be inverted, covered, or otherwise protected from contamination until used. All single-service drinking straws and containers shall be discarded immediately after use. DETAIL CLEAN LEGS, WHEELS AND PREP TABLE SHELVES IN DOUGH PREP AREA.
