All food shall be protected from contamination and the elements, and so shall all food equipment, containers, utensils, food contact surfaces and devices, and vehicles. FOUND CUPS USED AS SPOONS (COVERED WITH YOGURT AND GINGER AND GARLIC IN WATER) AND A MIXED VEGETABLE WITH COOKED CHICKEN DISH WITH HANDLE OF SPOON LYING IN FOOD IN REAR PREP AREA. FOUND EXPOSED HAND SINK WITH NO PAPER TOWEL AND HAND SOAP AND EMPLOYEES WASHROOM IN THE BASEMENT WITH NO PAPER TOWEL. INSTRUCTED MANAGER THAT ALL HAND WASHING FACILITIES MUST BE PROVIDED WITH PAPER TOWEL AND SOAP ALL THE TIMES. CITATION ISSUED CRITICAL. MANAGER PROVIDED THE PAPER TOWEL AND SOAP ON THE SAID EXPOSED SINK WHILE I WAS DOING THE INSPECTION.
