All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. MUST NOT USE TINFOIL OR PAPER AS LINER FOR SHELVING OR EQUIPTMENT THROUGHOUT KITCHEN. SHELVING THROUGHOUT KITCHEN MUST CLEAN. MUST NOT USE RAW WOOD AS SHELVING INSIDE FRONT PREP REACH-IN COOLER. TALL REACH-IN FREEZER AND GLASS DOOR REACH-IN COOLER REPAIRED WITH DUCT TAPE. MUST REPLACE/REPAIR WITH CLEANBLE MATERIAL.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. ALL STORED ITEMS IN REAR PATIO STORAGE MUST BE ELEVATED FROM FLOOR 6' OR ABOVE. MUST NOT USE CARDBOARD AS MATTING FOR FLOORS.
