Are you saying that we don't have happy cows??

Well, cowabunga dude! Our cows are so thrilled after the dark days of winter, they leap over the moon, and don't need a dish or a spoon.. Litlle dog laughter is optional of course.

Fine then. Bring cheese. Bring lots of cheese. You know what happened to the boy in the bus. Might come in mighty handy.

Just cut into a brick of 9 year old my sis-in-law brought down this weekend from wisconsin. Also have a brick of prov, pepper jack, smoke ched, brick, and 2 pounds of curds. Cali. can keep there stupid "happy cows". The best cheese comes from east of the mississippi and north of the mason-dixon.
Take your taps with you, plenty of birch trees for a sugar bush. I have heard its about 50 to 1, but its as good a maple.

The instructions I have on birch syrup say it averages 100 gallons sap to 1 gallon of syrup. And the heat needs to be lower than with maple to avoid burning it.
