It depends a lot on the duration and type of 'daily driving', so here are a few I'd consider.
69 Z-28 with a little gearing, like 4:11 or even 4:56 depending on use routes ... it would be nice to have the factory chambered exhaust...not much of a highway package but great fun if you are old enough or young enough to stand the decibels for a while. (A '67, '68, or a '70 wouldn't be bad either)
'70 Datsun 240-Z, but a very small car by modern standards so (as with any older 'classic') safety becomes a concern in the days of so many head on's caused by texting etc.
'70 Buick Riviera would be nice for longer highway cruises...oh and make it the "GS" model...in white.
'70 Cuda AAR with automatic .. sort of a nearly practical compromise of the above.
Heck there are a few more but...I would also not want to alter these cars much if at all so, all things considered, daily driving is probably dreaming only. Truthfully with the exception of the Riv, the seats and seating position might not be kind in long term use on old bodies and many modern cars have them outfeatured by a lot.
I guess this is why I won't ever have another one of these...but it was a funnnn time.

the reason i pixcked a 78/79 Ford Bronco was unlike a highly collectable classic car like a 69 Camaro Z28 or a 1970 GTO judge or 1971 Hemi 'Cuda.
Because I would not worry about parking a Bronco at the supermarket or getting dings or dents on it or driving it in bad weather or in winter or towing my boat and going camping with it unlike a super rare classic muscle or exotic sports car.

LOL I just posted it, I don't own one. My oldest vehicle now is a 2003. But that's what I would choose to drive for an older car.
My uncle however, does have one, in British racing green. I'm hoping one day he'll sell it to me for a good price.
