I'd like a SN65 project Mustang, because I was born in 65, my dad had a 65 fastback, and I want to own one myself some day. I like the 65 body style, but I do like the newer model drivability. I would want one like this, but in vintage burgandy:

Short of the full conversion, I would take a restomod 65.

If you modify one of those old sixes to get more power you will more than likely sacrifice economy to the extent that you would get better mileage with a stock V8. Not that it wouldn't be kind of a fun project, but ultimately the best economy/power curve will come from a stock small V8.

not true at all. first if you modify the engine properly, you can pick up a lot of power, and still get 30mpg on the road. that is 10 better than my V8 mustang was stock, and 5 better than my V8 mustang after modification. and there are many members at fordsix.com that are in fact getting 25-30mpg on a regular basis with modified inline sixes. we even have one member that has built an early falcon with a turboed 250 that runs high tens in the 1/4 mile, and is driven by his WIFE. dont dismiss the old ford six out of hand because you think it wont be fast without a V8.

I have always loved the 1976 Mercury Cougar.They had a restyle for '77 and it cleaned up the '76's styling,but I just don't like it as much.This choice is based solely on styling,as I have no clue about engines.I also like the 1977 and earlier Cutlass,Regal,Monte Carlo and Grand Prix.Any of those would be a runner up.
