Only one of my cats from the past, she was always temperamental and quick to lash out... Mostly when scared or being groomed. Was long haired and matted very easily. Had to have saved frequently. Most others just froze. Only one didn't mind vet.
Have had about 8 cats in my past.
Our Sadie tried to bite our vet last year. Our vet asked me to remind her when we have an appointment so she can watch how we handle her on the exam table. I bring a cat muzzle in case it's needed, but we haven't need it so far.

Mine is like that. For a cat who is normally very docile, he turns into hellcat at the vet. Fortunately i have an awesome vet and they take really good care of him despite his aggressive (fractious) behavior. I take him to an all cat vet and the last few times he hasn't been terrible but then he is 17 and slowing down a bit.

I'm guessing it's afraid rather than angry and trying to defend itself against what it perceives as danger (the vet).
My cats were usually pretty well behaved at the vet thankfully.
Sometimes my Electra is, sometimes not. There have been times when the vet & tech had to wear the gloves and put a towel over her. Now, every time we go in, the vet warns the tech that she CAN be aggressive. The last couple of times we have gone, she has been fine. It could have been at the time when she was aggressive, she was just in pain (when she had her bladder stone).
My kitty has been fine with a female vet (and women guests). She's still skittish around men. I suspect a man was mean to her at some point. She's warming up to one of my male friends who was over helping me with the plumbing. She won't let him pet her, yet, but she'll stay in the same room with him, now. He loves cats and has two himself, so I hope she'll come around.
I wish there were more than just two options. Like, "depends on the procedure." My cat has been good except for the time last year they were trying to draw blood and she turned into psycho kitty. "Sweetheart kitty" is her normal demeanor. She's great during the routine exams.
Mine is NOT a good patient. They've actually never been able to take her temperature rectally....only under the armpit. They've learned to distract her with food. One tech holds her, another tech shovels food into her face, and the vet tries to complete the exam.
One of the techs did say that even when Olivia gets mad, though, she doesn't really get mean. She will bite -- as cats do -- but she backs off as soon as her teeth make contact with flesh. She's very sweet...just scared, and she doesn't like being manhandled.
