My first cell phone that had significant RAM (back in the early 2000's, was measured by the Megabyte and my current S21 measures RAM by the Gigabyte. My first personal computer in 1977 only had 16 Kilobytes of memory. Memory needs change over time. In a couple of years, we will probably be using phones with RAM measured in Terabytes based on the current trends.
128, 256 & 512 GB are storage. Important not to confuse RAM with storage.

I did a bit of analyzation and find that my current Pixel 4 is just 128 GB and am only using 40% of that. So I've decided to upgrade to the 256, but not the 512.

So you're using MAYBE 40 GB? 128 is plenty. My phone is 128 and I have WAY more on my phone than you do and it is STILL enough. I'm thinking of moving to 256 next but I am at 85% full now. I also have 25GB of music stored on my phone.
I have found that with the more storage I have, the less "housekeeping" I do. I have apps I downloaded to check out, and just left them on the phone, even though I never really used them. Same with pictures and videos. I have many pictures and videos I could delete, and save a lot of space, but have never bothered to take the time to go delete them. With that said, my phone has 128 GB of RAM, which I am currently using 100 GB. I also have 8 GB of SD storage space, of which I am using 5.5 GB. If I had 256 GB of RAM, I would just collect more junk.

Storage, not RAM.
No phone has 256GB of RAM.
The Mac Pro desktop has at least three configurations available with more than 256GB of RAM, but they cost $6,000.00, $10,000.00, and $14,000.00 extra....just the added cost of that RAM, irrespective of the rest of the computer.

Yeah, I'm at 70 GB/256. T-Mobile carried the 12GB/256 version on my phone for the same price as the global 8GB/128. It's nice and all to have the extra space but I wouldn't necessarily have paid more for it. If I were in the market for a phone today, I'd probably go with the Pixel 5a 5G which is a 128 GB phone. Worst case I could just delete some old audio books if I suddenly found that I needed to nearly double how much space I need.
Probably to keep up with the iPhone models that offer that.
From a consumer perspective, Samsung should have just kept the microSD expansion slot.
You can just use an OTG cable flash drive or external hard drive though with Android phones. I'm fairly indiferent between microSD and OTG cable.
