I am taking the BF on a surprise trip to Beaufort in ~3 weeks to celebrate our first anniversary. I already have the hotel accommodations and have made dinner reservations for one night (at Saltus), but would love other recommendations. Even though we live in Charleston we work like crazy so unfortunately don't get to enjoy a lot of the everyday amenities, so please take that into account... we would be perfectly happy doing something in Beaufort that we could do here! I am open to any suggestions - touristy, out-of-the-box, must-do's - you get the idea. Thanks in advance!
Visit Hunting Island State Park, walk the beach and climb the lighthouse. On your way back to town, make a side trip to the Penn Center, then a stop at the Chapel of ease and finally Fort Fremont which are all on the same road. Take a carriage ride in town, or any of the specialty tours such as the movie tour. Enjoy walking and shopping Bay Street, then walk the neighborhood on the point. Your choice of Saltus is excellent, after dinner take a seat at the waterfront park and take in the views. I would suggest Blackstone for breakfast, and a visit to the Chocolate Tree for desert. Enjoy your visit!

I definitely agree about walking around the point. Those old homes back there are gorgeous and the spanish moss on the trees and dangling in the streets are beautiful.
There are horse carriage rides, boat tours, etc. Light house is nice. Maybe take a picnic lunch when you go there because there are a ton of picnic tables within sight of light house. I love love love Beaufort.
