Pio Pio on East Blvd and also in Ballantyne is a Peruvian/Columbian restaurant with really good Rotisserie chicken. Genaro's off Park Rd Ext near Pineville is similar.
They don't put queso on it, but they have some unique sauces and their chicken is great. Might be a little closer to you than Montford Dr.
Closest thing I can think of would be Boston Market. There is one in Matthews on the corner of Independence Blvd and Sam Newell Rd.
I'm looking for the Jaco and queso sauces as much as the rotisserie chicken.

I just checked. RC is closer than your recommendations. But I will keep them in mind for when I'm around those areas.
I've asked the staff a couple of times, if the owner of Roasting Company will open more restaurants. They say he tried it somewhere else (University I think) and it didn't have enough lunch business to sustain the location. So he lost interest in doing more expansions.
Such a shame, he has a great franchising concept I would think. You can get food so quickly at Roasting Company and it's so much better than "fast" food.

And it can be fairly healthy. Not like I will ever order it, but someone could.
What about Boneheads in Ballantyne? I've never been, but it looks similar. Boneheads - Relaxed Place, Serious Taste! There used to be a Roasting Company in Unisveristy City but it closed. I miss having them closer to where I live.
