Friday night got so popular that they also do a Sizzlin Saturday for more trucks. There are well over 20 trucks in the Charlotte area now.
There is a major "roach coach" company in Stanley that scouts all of Lincoln and Catawba county(plus some others), usually for major construction projects, and hit them around noon. It's been there for years and I know the owner. Food is good and the prices aren't much different from stores.
The food truck scene is growing, to be sure. There is often one at the corner of Tryon and 4th (I think it is 4th) in the parking lot across from Jimmy John's. The Roots is a good one.
Ballantyne Corporate Park has several during the week.
