I'm flying in for the Housewares show in early March. I'm meeting co-workers but will be traveling to and from the airport/hotel (not sure if ORD or MDW yet) by myself. I'm a middle aged white woman from Oregon.

I'm used to taking the Marta train in Atlanta to and from airport but not sure if it is advisable in Chicago?
we are staying at an as yet undetermined downtown hotel. Leaning towards the Palmer House which doesn't seem to have a shuttle.

trying to avoid paying a fortune for an uber, but don't want to do something stupid just because I think it would be cool/cheaper to ride the train I've seen in the movies for years!

Yep. Perfect. Take Blue line from O’Hare, get off at Monroe St. Maybe a 5 min(?) walk to Palmer House.

If Midway, take Orange line to Green Line, exit at Wabash (right by hotel).

Enjoy!

Remember: Change from the Orange line to the Green line at Roosevelt road! Next stop will be Adams and the Palmer House is maybe 10 yards from the exit stairway.

My co-worker says there are a lot of stairs to and from the trains in Chicago, no escalators like in Atlanta. Is this correct? she hasn't ridden in years because of the struggle to get luggage up and down.

Pack light. Some have elevators. Some have elevators you'll hold your breath while in use and burn your luggage afterwards for.

yep, you will be walking up and down stairs, possibly snow/ice packed, so if you are afraid of that, take a cab/uber, if you have heavy luggage

Perfectly fine. That's how I arrive/depart the city whenever I visit. Remember, if you fly into MDW and you're returning to the airport, pay attention when you transfer back to the Orange. The Green and Orange share the same platform for awhile. I wasn't paying attention one day and hopped on the first train that stopped. I realized my mistake once I hit 43rd, LOL! Glad I didn't keep going further!

If an elevator is an issue, both lines have them available at the airports and certain downtown stations, so you can plan to exit at a station with an elevator if necessary. Also, if the transfer sounds confusing, you can stay on the Orange line; it will just take slightly longer. If using O'Hare or on the return to Midway there is no reason to transfer. As to safety, I haven ridden both the entire CTA and MARTA systems and the Atlanta airport line passes through worse neighborhoods than either Chicago airport line.
