"Big Onion",

supposedly having to do with the native-american origin of the word "Chicago"* and also inspired by New York's "Big Apple"

Two more I thought of:

Beiruit by the Lake
Paris on the Prarie

Which is weird, because Beiruit was considered the "Paris of the Middle East" before it was ruined by civil war. So Chicago would be "The Paris of the Middle East by the Lake". Um, yeah.
