Because religious leaders in Jesus' time (and today) tend, not always but for the most part, to be the most prone to becoming prideful, arrogant and legalistic. The Pharisees, and in this case, the Sadducees knew the Law backwards and forwards but they had no understanding whatsoever of the spirit of the Law. This is why Jesus was constantly criticizing them and telling them to "go and learn what this means: 'I desire mercy, not sacrifice.' "
"do ye not therefore err, because ye know not the scriptures, neither the power of God?"
I think he is reminding them of the obvious fact that they don't know the power of God. I think we err in the same way today when we state without any doubt that God will do this, or God wants that, or whatever, because we are only human. Just like they were. We really don't understand or know the power of God. And when we state that WE know what He wants, or WE know what God will do, we are no better than the Sadducees.
