Well at the risk of hijacking somebody's Denver thread, I think I'll just bump this one up in time for the Pueblo Colorado Chile and Frijoles Festival!

Here is where the Pueblo Colorado Pueblo chile meets the New Mexico Hatch chile and becomes my Fast and Easy Salsa and my best batch ever Green Chile. I used the Hatch to cool those Pueblos off a bit. This chile sure doesn't need any extra heat. The salsa isn't quite so authentic as the chile as you can see from the recipe above, but it is fast and good... but a bit hot.







Yeah that's right! Tempted to eat it with a fork.

That looks (and I'm sure tastes) absolutely awesome, McGowdog! You could probably put Jorge's and Mi Ranchito out of business with that recipe...

Where in Pueblo do they sell Albuquerque Tortilla Company chile?

I'm telling you, Grocery Warehouse has this stuff frozen. I don't know if your typical Albersons has it or not, but there used to be a Grocery Warehouse near my parents home near 72nd and Federal.

We had a Grocery Warehouse here in Pueblo near Northern and Prairie (Sprague and Prairie) but it's an Alberstons now. But I think they still have the same layout as it was before. They have a bunch of Spanish food you won't see at the run-of-the-mill grocery store.

This honestly was my best batch ever. I bought a pork shoulder for 4.50 today. This thing was 4.5 lbs, normally 11.50 or something, and got it for under a buck a lb at Safeway. I bake that, pull it out and brown it in a frying pan, add some spices here and there, then throw in the chiles and fry that a bit, then into a stew pot. Then I repeat that process until all the meat is cooked and all the chile and meat is fried up, then into the stew pot. Then the diced tomatos, a few more spices, some chicken broth and let is simmer. Then bring to a boil, add the flour (1/2 cup stirred in with about a 1/2 cup of chicken broth) while it's boiling, stir, bring back to simmer and you're done.

We couldn't afford to sell it for what those other places sell it for. But I'd enter this stuff into any contest right now. My pork is slightly crisp and yet tender. I don't know of any other like it. Bring on the flu season!

Pueblo's Chile and Frijoles Festival was picked as the second best food festival in the country! This is just one more reason why Pueblo is a top 10 best food city for small and medium sized cities and just another reason why I love living here.

Being from Florida but loving the SW, I enjoyed the pictures and information. I can't eat very hot food though I like the taste of the milder chilis and love me some good homemade salsa.

The funny thing is I do not like spicy food either. So yes I like the Mexican food in Pueblo including the chili but I go for the mild...

This weekend is the famous Chile and Frijoles festival in downtown Pueblo. I was there last night and took some pictures so I thought I would post a few.
