I would second Soda Lake in the Denver area. Lots of SUP there. But its small so if you like long trecks, you might have to do loops.

We are usually up in the mountains at Elevenmile res. You have to watch the wind but the NE shore (start at the Coyote Ridge parking lot and head East) is a really interesting place to either SUP or Kayak.

Did I mention the wind.. I took this picture this last weekend on Elevenmile.

Elevenmile was one of my favorites, especially in 2002/2003 when the low water levels exposed gorgeous large boulders in the water. That garden of boulders looked like something out of Lake Tahoe photos.

The water there is cold all year, and the wind gets wild. Check forecasts especially carefully before you go.

Horsetooth Reservoir in Fort Collins has a swim beach. Not sure when it closes for the season. Bring a wetsuit, it's cold.

You might be able to SUP in some of the little coves off Horsetooth that are accessible from Lory State Park without having to deal with the motorboats on the main part of the reservoir.

I just remembered that the managers of Gross Reservoir prohibit “body contact” activities such as swimming. Same for Dillon Reservoir.

Honestly paddle boating isn't the thing to do here. You can... But prepare for it to be disappointing compared to other places.
