You're not eating enough and you will have a hard time to keep it up. There's no reason to eat once a day on a low carb diet. Losing 10 lbs a month on such a restricted diet isn't really that great. Almost any diet will have you losing 10 lbs a month.
You really need to up the food intake if you want to keep it off. I lost 80 lbs in 6 months on Atkins in 2003 and have kept it off. I ate all the time. I don't eat as much now bc I'm not on Atkins.
