My boyfriend drinks at least a gallon of water everyday and exercises daily. He has a desk job, so throughout the day he finishes the gallon. Then he comes home and drinks more water. He has been doing this for a couple months. Is this hurting his body in anyway?

Sounds like alot of water for one person in a day but I don't see how it could be harmful. Office buildings (especially mine) tend to be very dry so he could be doing his body good by staying hydrated. The only problem that I can see from drinking so much water is that he probably has to make many trips to the potty each day.
That is a lot. He could upset his electrolytes and then he would be in trouble. If he's thirsty, then there is that possibility that he is getting diabetic. He really should see a physician regularly to make very sure that his electrolytic balance is within a normal range. He may need to take additional potassium and other stuff to even things out. It's not something he can decide on his own. He should have blood work done.
Drink when you're thirsty, unless you are doing some high level physical thing in very high heat. Regular, everyday work and exercise in moderate temps doesn't require gallons of fluid!
You go by weight and activity to determine water needs. (along with any extreme climate conditions like a desert setting or dry office) There are calcs online to help determine his needs.
If he's exercising then it's fine. Only danger with drinking too much water is he could lower his body's sodium levels, which is very dangerous. But that's a lot of water! It happens though:
