I got off work at noon today and was feeling the need. The need... for cheese.
I made angel hair pasta with a three cheese pomadoro sauce, topped with shredded Quatro Formaggi (4 cheeses). Nothing like a blend of seven different kinds of cheeses! It felt so right. No regrets.
Leftovers from dinner last night. I made homemade corn tortillas (for the first time! delicious) and fish 2 ways: baked and fried. So today I had a couple fish tacos with guac, salsa verde, and arugula. Plus some leftover rice pilaf.
