First meal cooked by myself since my return to Florida.....
Beef stroganoff with salad and roasted cauliflower.
DD and DH have a list a mile long of stuff they want me to cook, guess they missed me!
I made CheyDee's chicken pot pie tonight. Despite a few mishaps - it was delicious! My family scarfed it down like they hadn't eaten in years!
I used broccoli and carrots - and I added rice. Well actually I had cut up and boiled some potatoes to add like the store bought pot pies...but I overcooked them and they were just mushy - but the rice was great!
Using pie crust is new to me. I am not a baker by any means So the directions say - take out the pie crust and get to room temperature - if its not getting to room temperature it says to put in microwave and defrost on 30%. This is where the fun begins. I followed the directions but the crust sorta melted! I had no idea what to do! So I put it back in the fridge. That didn't really help. So I had to think ..... what would Martha Stewart do (as IF she would use premade pie crust) So I started looking around and found a rolling pin! I didn't even know we had this, lol. I started re rolling the crust. Then the crust stuck to the pin.....now what? OH FLOUR! So I put a bit on flour on and re rolled.. This worked out fine. But this whole time we should have been eating already because DS has basketball practice...so I was frantic, lol. By the time I got it all in the oven not only was I covered with flour but so was the entire kitchen....really - it looked like it does in a movie! Next time, I'll do better. I'm exhausted now!
Today's menu: baked pork chops with mushroom gravy, roasted onions on the top. Mashed potatoes, mixed grilled veggies, spinach salad. Unsweetened iced tea.
