What is this 'Summer Sausage' that you all talk about??

Anyway, yes, I like to have crackers and cheese as a snack sometimes, in the evenings. It makes a nice change from eating crisps!

I would usually have either Jacob's Cream Crackers, Ryvita or Swedish Krisprolls. I would have either pate on them or a cheese spread such as Primula or Philadelphia.

Now and again, I'd have some sliced cheese on them, such as Cheddar, Red Leicester or even my local cheese - Caerphilly! Sometimes I would add some sliced ham or a bit of Branston Pickle (which goes really well with cheese).

Depends. I eat soft cheeses (St. Andre, Fromager D'Affinois, Delice de Bourgogne) with bread; maybe fruit; no meat.

If I'm eating harder or more aged cheeses (Toma Piemontese, Alta Badia, Parmigiano-Reggiano), I will include olives and cured meats, usually soppressata and speck. Maybe mozzarella balls and cherry tomatoes. I generally don't eat bread or crackers with these cheeses.

If it's an assortment, a "cheese board," everything might be on the tray.

This takes some preparation, but it's worth it. Grind some salami and mix it well with softened cream cheese. Judge the right proportions yourself. I've found that a ratio of 2:1 of cheese to salami works well. You can use other sausages as well for this.
