Sorry if it's already posted, but, how do you order your steak? I was medium well when I was younger, moved to medium, & am now medium rare, w/ the emphasis on rare. I love my steaks juicy & bleeding. lol
Had to chose rare as there was no option for "Blue" which is actually how I like it. I prefer blue to rare as rare tends to be bloody when "blue" is not. I basically like my beef to be seared on both sides ( though i love Steak Tartare and Carpaccio so raw can be yummy too). Anything over rare and to me it becomes chewy and loses all its flavour and tenderness which I hate.
Rare for me and, like Mooseketeer, I also love it Pittsburgh rare: Pittsburgh rare - Wikipedia, the free encyclopedia - it can be even harder to find anyone to cook it that way, though, than regular ol rare or medium.
Medium for me. I used to like it well done, but have learned to eat it medium because most of my family and my in laws eat it medium to rare. My BIL likes it just barely cooked. If it's bloody or mooing as I call it then I won't touch it. I only eat red meat a couple times a year anyway.

Moo for both of you
