I don't do it as often as I'd like, but when I do, it's an experience to behold. Every now and then, I'd like to just grab a slab of sharp cheddar when I'm not doing the grated on top of salad. Greatness.
I have a new favorite, we get it from our grocery deli: it is horse radish cheese, I have to be careful or God only knows how much I would eat in one day...I can pretty much bet, for breakfast tomorrow I will just have cheese or maybe a little cheese on a piece of toast...
I am really bad regarding cheese as I am addicted to it as much as I am alcohol. I will even buy shredded Parmesan for my pasta, and then manage to eat all the cheese and then wonder why I have none for my pasta.

I used to do that quite often (I guess I still do it now) if I feel like it.

I got a horseradish cheddar, oh so good. You just really want to eat it alone or with an apple. I made a grilled cheese sandwich, which sounded like it would be awesome. But melted or prepared? No, it did not work out well. Something subtle got lost.
My DH like when I take any type of brick cheese and cut into cubes, place on a plate and melt it in the microwave for 1 minute. He calls it melty cheese. His favorite is melted colby jack
I eat it by itself, with other things(burgers, crackers, pizza, etc), I dream about it....I would compose operas about it if I could compose operas! Yes, I eat cheese....and it's quite often!
I love bleu cheese but unfortunately it doesn't love me. So I can only eat it sparingly, and thus, I reserve it for salad dressing. Maytag is right up there on my list of favorite brands.
I do eat cheese all by itself though. Cabot's Racer's Edge sharp is awesome for solo-munching. I'm a big fan of Emmentaler swiss too.
