I care! Having lived in the south for decades, I adore pecan pie, and all things pecan. Even had pecan trees in the yard. Pecan candy, roasted pecans. One day I took a trip to St Louis (before the riots), and had a walnut pie. Walnut pie! UGH!
IMO, the taste of just the nuts is very similar. When you compare a prepared dish it's not apples to apples anymore. The crust, the added sugar and other ingredients also make the dish. Taste just a plain pecan and a plain walnut and then compare them.

Walnuts definitely have more bitterness than pecans, no question. A quick internet search will find a myriad of sites claiming that pecans are "sweeter and drier" than walnuts. The internet is full of bad info. We should taste for ourselves.
I like both. They each have their own unique flavors. I'm not sure I could do a walnut pie, as I could a pecan pie but then again I'm more in favor of those Waldorf salads that include walnuts but not pecans.
There were times I've had both a bad walnut and a bad pecan but eventually got over the horrible taste and went back to eating them.
I really only like BLACK walnuts...they are more flavorful than regular walnuts. As far as black walnuts or pecans....depends on how you'll be using them!
A Pecan Pie wouldn't be right if you used walnuts!
