DH had to leave his bike back home in UK so I'll have to go with you instead!

Tonight we had sauted bay scallops and large shrimp stir fried with Asian vegetables and yellow rice.

Tonight I made scallop casserole. Haven't had it yet but it sure smells good in the oven. Mashed potato and green beans.

I took sea scallops (the large ones cut them in half) I used 2 lbs.

Crushed up a sleeve of Ritz crackers and poured them on the bottom of a buttered casserole dish.
Place the scallops on top of that.
Then melted a half a stick of butter
put in almost a cup of merlot
to that I added another sleeve of crushed up Ritz crackers.
Spread that completely over the top.

Baked in a 350 oven for 40 minutes.



It was really good.........Simple too!
