Since I'm trying to use up everything in the fridge and cabinets before packing the pots and pans away this weekend, our dinner was quite interesting......Leftover hot dogs, meatloaf, chili, fries, pickle salad, garlic cauliflower......sounds like a case of heartburn waiting to happen!!

Thank goodness I have a very tolerant husband.....no matter what I put on the table, he tells me it's delicious and never complains!!

And, a big Welcome to Amber from another newbie to the What's for Dinner group!!

I promise that after we move and get settled, I'll be cooking again and sharing recipes!!

May I say that a while ago, Elston posted a recipe for Corn Bread Casserole...I made it tonight with chicken and the fixin's and I have to say it was outstanding!!!!!!!!!!!!!
The only thing I changed was the cheese...I added Mexican and cheddar to the batter as well as on top.

Thank you Elston!!!! Another great one.

Did I add that as a rule I do not like cornbread.

We grilled pork chops with a Stubbs rosemary and ginger spice rub, roasted some red potatoes with garlic and rosemary, and had a mixed salad.

We were going to make tacos but my son in law called from 'down the hill' and asked us to meet him at Vince's Spaghetti. We picked up our mutual family friend along the way and had a great spaghetti dinner.
Vince's is AWESOME, we used to go there about once a month when I was married and lived in Ontario.

hey, everyone! Posting super-late, I am all topsy-turvy from working on the house I told y'all about, thank God for the internet!
I made baked basa, brushed with olive oil, and sprinkled with tarragon, salt, and pepper, (dont go eeeeewwwwwww, its US farm-raised) cheese grits casserole, green papaya slaw, and lemon pudding cake, I am working from home tomorrow, see y'all then!

Last night we had pizza pasta. A friend of mine told me about this some time last summer. Quick and easy. And yummy!

1 lb of pasta of choice
Jar of spaghetti sauce
pepperoni
mozzarella cheese.

Boil noodles and mix together with the sauce and pepperoni, saving some of the pepperoni for the top. Put mixture into a casserole dish and sprinkle the mozzerella on top. If you are really cheesy, lol, you can mix some inside, too.

Place pepperoni pieces along the top. Bake on 350 til the cheese is bubbly and completely melted. Let it sit just for a couple of minutes and there ya go. If you like pizza, you will like this.

I added mushrooms last night, too.
