Tonight we are going out for either sushi or Thai. Been working on our vegetable garden and watching soccer on the tube this afternoon. Everyone's meals sound great!
My wife is inside working on mac and cheese and some creamed spinach. I'm sitting wasting time until it's time to go back out to the grill and TURN THE RIBS! Oh BABY!
Tonite is panko breaded center cut pork chops roasted and stuffed with fresh basil, sage Italian parsley, blue cheese, apricots and slivered almonds, with garlic couscous and broccoli. Happy eating everyone.
We spent the day yesterday taking my daughter to visit friends here that she had not met and let my grandson play with my friends grandchildren---great fun! Got home a little late to prepare a big dinner so we made BLT's and soup. Tonight is meatloaf, mashed potatoes and green beans. Need to go and pick up all the ingredients and then spending the rest of the day fihsing and relaxing.
I've been craving cooler, lighter fare, and stumbled upon a recipe on the back of the Progresso Italian bread crumbs box that I want to try. Seems you melt a little butter and roll thin chicken strips (about 1" width) in the bread crumbs, and bake them until tender and done, and use them on a salad. Nice switch from just grilled chicken strips.
This time of year just screams for grilling, I think. I wish the grill didn't intimidate me! Can you still find, and purchase, those small hibachis?
