OP, I would go with a second salad. Your son sounds like he is trying to eat healthy, so you don't need a second carb, but you need something less expensive that will take up some space.

My family loves homemade coleslaw. Cabbage goes well with the ingredients in your casserole. Don't go crazy with the dressing; just enough to dampen the cabbage.

Or marinated bean salad. Called 3 bean salad even though there are more than 3 types of beans in it.

Or start with an appetizer of raw veggies and dip.

Or a sautéed cabbage with a bit of bacon and onion would go well.

Any of those is low carb, good level of fiber so filling, and some usable nutrition.

I went with the carrot soup which was delish and then I made two separate pots of his sausage and potato dish. This way I didn't have to worry about not even distribution of sausage. What was left in the second pot was frozen for another meal with just the 4 of us.
Thanks to everybody for all the suggestions. Some sound like great additions to my rotation.
