they seem to like lamb dishes- id want to reflect local foods and try to offer something unique no other competitor would offer


for something different, and eye appealing , id make a crown roast of lamb or venison. then serve them table-side

id also make my famous lobster-quiche , as a side

and maple steamed fiddleheads for a different veggie

dessert would be home-made blueberry ice cream with a shot of baileys irish cream for a distinct and delicious flavor

What no brains or testicles? Lamb tongue? Oh wait that was one of the episodes this week. Didn't look tasty to me at all! At east it was more freaking risotto. Ramsey has a love affair with risotto it seems.

I wonder...there are so many dishes...right now at this moment?
I would push the low carb fad...

I would do my Fake Fried Rice dish....pulse raw cauliflower till texture of cous cous...
sautee onions, green beans cut half inch, broccoli, red peppers, mushrooms, celery , scallions fresh ginger.
Add the caulif. and half a bag of froz peas and carrots, pouring toasted sesame oil and lemon grass paste,
and soy sauce thru out.
Turning alot till a bit browned....add 3 previously scrambled eggs in the sesame oil and salt, lightly sprinked with sugar.

Then strips of medium rare filet mignon, (beef tenderloin in some store) previously salted, marinated with subtle Marsala, or dry red wine on a bed of bacon....or maybe
the bacon on the Bib (butter) lettuce salad with a garlic, lemon (drop of orange juice) olive oil dressing topped with strips of fresh basil, extra fine silvers of red pepper, thin purple onion stips inside ...with sliced strips of Blue cheese
or Stilton in between the meat and the salad...hmm, a little fresh dill somewhere on the plate.

Presenting it all as a low carb dish.

One another day ...maybe Indian using no curry....accent that it is a non curry Indian dish
with my garlic raisin chutney like a brown paste) , samosas with yogurt in the batter to soften the dough...bla bla...
using black mustard seed cooked in mustard oil, crushed and whole coriander seed, chat masala...bla bla thru out.
Chicken marinated in lemon and yogurt coriande , slight cardamom...as tender as butter...oh, lots of butter absorbed
into
the Basmati rice as it cooked in plenty of Rose water.
And a subji...bla bla....

Hmm, maybe everything with a side of lobster bisque somewhere!! Ha!

A truffle pastry, or poached Pacific salmon. Maybe fresh halibut stuffed with dungeness crab. My wife and I judge restaurants by whether they can cook better than we can. Not many meet that standard.

Caramelized pork belly braised in ginger, coconut water, topped with par boiled eggs and candied onions.

Served on coconut rice.

A personal favorite comfort food. And longan juice for drinks! Crab+Shrimp+Pork eggrolls wrapped in lettuce+mint for starters!
