Not sure what to call it . . . but often on a Sat or Sun evening . . . DH and I enjoy something simple.

So we fix a platter of cheeses, some different crackers, maybe some shrimp w/ cocktail sauce . . . some sliced salami . . . grapes, cantelope . . .and a glass of white wine. We do this according to what we have on hand at the time . . .

Any suggestions for other types of combinations that would be fun and easy to fix for this type of meal?

Soup and crusty bread, Cheese and bread or simple pasta with a simple tomato sauce.

Frozen potstickers from the Asian market by my house, pan-fried then dipped in soy sauce with sesame oil & red pepper flakes mixed in. YUM!

Every suggestion so far sounds good to me though.

I agree - it all sounds good! Great idea - the potstickers - and yes - the pasta works, too!

I wish I knew how to put together a really impressive antipasto . . . did I spell that right?

Now I am thinking . . . french onion soup, crusty bread . . .

Antipasto-is great. Large platter-place everything in "rows"-roasted red peppers, marinated artichokes, marinated mushrooms, provolone cheese, salami, prosciutto, capicolla (hot ham), tomatoes (grape or cherry),mozzarella cheese. Drizzle w/a little olive oil. Serve with crusty Italian bread.

I like a good stir fry (use the frozen stuff if you're pressed for time) with noodles and a peanut sauce.

Well, I can do that! Do you put it straight on the tray or put it on a bed of lettuce? Do you use seasoned oil or just a nice, flavorful oil?

I love feta cheese . . . does that fit in or do it on the side? Or just stick to the mozzarella? And do you use mozzarella balls?

If you make the antipasto(which I love) stick with mozzarella or provolone. I use lettuce b/c I like it just make sure you don't use too much oil or dressing mixed in b/c it will be too soggy.

If you like feta so much make a really big greek salad and serve with warmed pita bread.

But of course you can make whatever you like. Just enjoy.

I'll sit down with a plate full of smoked cheddar slices (Hoffmans), green olives (Santa Barbara), hot pickled jalipenos/carrot slices (Herdez), a few garlic rubbed Ritz crackers and hard smoked wild Alaskan salmon. I could live on this stuff !
