I really like Cornish hens in that they are the best poultry for two people if you don't want leftovers and they are my holiday choice for a small party. However, I find them to be very bland, even worse than the standard grocery store chicken. However, it is pretty easy to season and they absorb some of the aromatics that you cook with them.

Love 'em.

But a Cornish Game Hen is just a chicken that is too young to be sold as a chicken. And you wouldn't pay much for a chick - even though that is what it is.

I cook at least 10 of them every Thanksgiving (for family and guests) because I don't want a lot of turkey left over. I usually wrap the entire hen in bacon before roasting and stuff them the same way I would do a turkey. Each person prefers having their own bird to eat at their own pace - there are leftovers and then again my husband never has any leftover bird.

The whole chickens and chicken parts come from a Cornish cross. Often times called a Cornish X and are processed at about 10 weeks old. The Cornish game hen is nothing more than a CornishX.
The name " cornish game hen" is just a marketing name for the standard Cornish X that is butchered at 42 days of age.

Probably wouldn't sell nearly as well if they were labeled "half grown chicken" or "juvenile chicken." like "veal" isn't labeled "baby cow" or "calf."

I'm having an orphan Thanksgiving with just one friend and he is making these for us. We'll go ahead and make two since the two of us will make good use of the leftovers! He will make a fuss over the presentation so it will seem special. I haven't had one in what might be 20 years, so if it is a little more than chicken or turkey, don't care.

They're the little chicken-thingies.

I love them, but they have really gotten expensive. Used to buy them on sale for $1.99. But now, the very scrawny hens are $3.99......I'm better off getting a whole chicken and cutting it in half.
