If the restaurant served one dish made to order would you go at least once to try it then continue to go if you liked it, even if they continue to serve one dish?
In addition to the one dish which would be sold by serving or batch the only beverage available would be regular coffee (no decaf), ice water, carbonated water, 2% Milk and iced tea (sweet or not).
You can eat there or take it home but the seating would be very limited in the beginning and the only other item available would be white bread with real butter or garlic bread.
A famous BBQ establishment serves BBQ pork ribs, white bread, chips, and a drink - that's it. The quality is so good that people stand in line for hours to eat there. I know this because I stood in line for three hours myself. Seating is minimal and often unavailable.
Most BBQ places here serve essentially one dish. By-the-slice pizza places do essentially one dish. Food vendors like taco trucks, street meat carts, etc. Often serve one thing. If it's good, and competitively priced, it'll do well.
If I like the one dish they make. That's because restaurants with a limited menu often make what's on their menu very well. I was reading a critique about McDonald's some time ago. It said one of the big reasons the speed and quality of the food has decreased so much is because the menu is now so varied that McDonald's has forgotten why people originally went out to eat there: they wanted a hamburger/cheeseburger. There is a restaurant in my city that serves the limited menu of which you speak. It's called Cane's and all they serve are chicken strips. And they are really, really good
It depends on the dish and how well they prepare it, and if it's priced right. Chili and spaghetti are two foods that come to mind that might work as one-dish places, but dang they better be good.
Back in the 1950s-1970s there was a great chili place in downtown Dallas. You could have the chili plain or over beans or rice or spaghetti, but all you could order was chili and crackers. It was good stuff.
There are non-chain hamburger joints all over the country that do that very well.
One in my hometown has been serving nothing but burgers and fries and Coca-Cola or water since about 1946.
Another is a little more upscale, you build your own burger and they serve beer as well as soft drinks. They've been around for about 30 years.
Many years ago on SXM, Mary's Boon served one or two dishes only per night, which I know is different from what the OP was asking; however, I know of no other place that even served that limited of a menu. Anyway, if you liked what the chef was preparing, you made a reservation. They also had a honor bar and it was on the beach, where many times we were the only patrons and got to eat right on the beach. Miss that!
If the place served something that was really good, I would go but probably not often. We have a food truck near us that started with just pulled pork sandwiches, but they had to expand their menu to about 10 sandwiches and they just put out a sign that they now serve hot dogs. It doesn't appear that a limited menu is a money maker.
Unless you're in Springfield, Illinois - they serve "chilli" in the Chilli Parlors.

My favorite greasy spoon in Springfield was downtown at the coney dog place, coney island sauce, mustard and onions, I could eat so many of those things.
