I have some leftover sauce from chicken cacciatore that I need to use up. I picked up some cod and had intended that for dinner tonight but was uncertain how to prepare it. After looking online for recipes, I found 'Red Lobster's cod' recipe.
I just am improvising a little with the sauce instead of tomato slices.

Baked cod topped with broiled cacciatore sauce and Parmesan cheese served with a lemon wedge (for the fish), Jasmine rice and steamed spinach with freshly chopped green onions.

beef enchiladas, refried beans and all the fixins.

Yesterday was a fast day, trying not to overdo it today but soooo looking forward to something spicy

Whole wheat pasta with edamame, garlic and oil. I will also make some chicken thighs for hubby.

2 toasted slices of stone ground whole wheat bread with strawberry preserves, a strawberry patch non-fat Greek yogurt and a mug of tea with a teaspoon of sugar & a bit of non-fat milk.

Sandwich of vegan cheese, avocado, kale, spinach, arugula, red cabbage, shredded broccoli, sliced Brussels sprouts, dried cranberries, pumpkin and sunflower seeds on a toasted whole wheat roll. A few kettle-cooked sweet potato chips. Coffee and speculoos for dessert.
