Thank you for all the well wishes! Not quite is to speed yet but past chicken soup. Pasta with chicken breast and a creamy sauce, lettuce or bean soup with ham. SO 's choice.
I have to make that next week. We love it too. How do you do yours? We just use a masa harina based pizza crust layered with salsa, melting cheese, crumbled taco meat, thin sliced red onions and hot sauce. Bake. After it finished baking, top with shredded lettuce and drizzled with lime/avocado dressing.

I have a friend from Michigan coming here tonight on business in Knoxville so I am just making finger food...Sriracha and Honey chicken wings..cold shrimp...and vegetable plate with dip....and whatever else I can dig up...
Tonight we'll have creamy seafood enchiladas (I used shrimp, a few scallops and canned crab) in a homemade sauce, Mexican slaw and cilantro rice (it's just Creole rice with the addition of cilantro along with the onions, garlic, tomatoes and bell peppers); and mango sorbet for dessert along with some cinnamon cookies my neighbor made yesterday.
