Smothered pork chops, mashed potatoes, and green beans, a hearty dinner for a cold night.

We did NOT get a blizzard, barely more than a dusting landed here. I am not disappointed.

Just finished snow-plowing my driveway ... the storm here wasn't anywhere near as bad as it was SUPPOSED to be! We only got about 8-10" of snow when we were expecting up to a couple of feet. (I got a snow day out of it ... my students were happy, and so was I! )

I came in and didn't much feel like cooking ... so I opened a can of Campbell's bean with bacon soup (comfort food again! ), dished out half of it, added just an ounce or two of water (instead of half a can) PLUS spinach PLUS onions PLUS bacon bits ... and decided to add some black beans too, since I had them on hand!!

It was very very yummy, and boy, hot soup on this very cold day (currently 14 degrees but feels like negative 4 with the wind chill! ) was WONDERFUL!

Spaghetti! Son had the sauce on the stove last night and the water boiling when we suddenly had to head to the ER with hubby. We did not get out of there until 4:30AM. All the time Son and I were thinking about just eating some sauce when we got home. Son ate some, but I couldn't eat sauce at 5AM so I went to bed.

Tonight we plan to continue on with last night's dinner. I will be going to bed soon thereafter as my brain is a pile of mush.
