I will never forget my first Crab Louie salad in San Francisco many years ago. We live on the east coast and seldom see this on the menu, but in summer I try to make it whenever crabmeat is on sale.
I haven't had Crab Louie since I was a little kid in LA. Mom used to take me out to lunch and shopping and I always ordered it. I think one of the places we went was The Brown Derby.
Not much in the way of fresh seafood here in Little Rock.
I love tomatoes, cucumbers, lemon juice, olive oil and mint. Watermelon, mint, feta or avocado and lime. Peach, cucumber, tomato, lemon juice and basil. Jicama, cucumber, watermelon with mint, parsley or basil.
Basically I love summer fruits with lemon juice and herbs. Lettuce is optional.
I am not a zucchini super fan, but zucchini carpaccio is great. Slice zucchini very very thin. Add herbs or arugula, lemon juice, olive oil and a salty cheese: feta, percorino, ricotta salata. Yum!
And massaged kale salad with a dressing of honey, lemon, olive oil, stone fruit and pistachios.
Frankly, I make a lot of very simple salads - nothing but greens of various sorts and a light dressing. I like home-made vinaigrettes that are very simple and easy to make and can be applied through a spray bottle or spritzer, resulting in the dressing being much more evenly distributed while using less of it.
They really take no time at all, are cheap and simple and healthy...
