Just finished arranging the bright centerpiece. I had a moment in the store where I considered Pickled Beets. They check the block for colorful, but not everyone likes them. Pretty sure I'll go with the carrots.

Maybe go with rainbow carrots? They tend to sell them at whole foods. I like the purple ones best. I like to marinate the whole batch in balsamic, honey and fresh herbs, then roast the bejesus out of them. Purple and yellow carrots seem to cut the sharpness of bright orange carrots (seriously, I can taste the difference) and roasting mellows them further.

I might go with a savory (not sweet) mashed sweet potatoes instead of your party potato. You still do sour cream, chives, garlic and cream cheese or just butter with the sweet potatoes although I've never used cream cheese.

Here's the thing, though. The chicken is very garlicky/dijony/parmesany. I think it needs a starch that is more neutral than sweet potato. I've used pasta, and rice before, so I thought the potatoes which have a hint of garlic and onion would be compatible.

What you suggest sounds super good. I never would have thought of savory sweet potatoes.

I like this dinner!

However, if you want to have brighter foods you could add -

Baked sweet potatoes or a sweet potato casserole

carrot salad with raisins

cranberry mold - or cranberry sauce. Jello molds are coming back in style.

baby carrots in vodka.

I have thought along these lines. Keep in mind, though, that the chicken I am making is not the same as a mild turkey or chicken TG dinner. It is more Italian, with parmesan, garlic and mustard. I thought of carrot salad, but I am already having salad. I thought of a cranberry relish, but it did not seem to go with the type of chicken I'm making.
