Tonight at the Case abode: Homemade pizza (on a thin crust) with bits of Owens sausage, mozzarella, tomato sauce, and oregano.


Messy, but delicious.

Baked rock fish (rock cod) filets, with cabbage, corn tortillas and pico de gallo (homemade fish tacos) with beans and rice.
A few cold Bud Light beers too!

This is the photo I took of it in the restaurant.
So we roasted beets. First I peeled them and cut into squares, laid them on a sheet of foil, liberally sprinkled with EVOO. Seal the foil into a packet. Roast at 375° for 45 minuteish. Cool. They make the bottom layer, then a layer of sliced goat cheese. We decided to put a layer of full raspberries next but the restaurant put sliced raspberries at the top, sprinkled. Then a layer of juliened pears. We then sprinkled candied pecan pieces I made with brown sugar. I am sure crumbled pralines would work. My husband made the dressing with balsamic then added the olive oil left in the foil pack of beets. He then added maple syrup and honey, just tasting as he went until he felt it was right. Honestly I think his dressing was better.
I so hope you can follow this! It really was incredible.

Had some chicken breasts in the fridge so I decided to make soup. After I started it my daughter texted and said she wanted to come over and make chicken pot pies...perfect! Came out pretty good too!
