I will make a big pot of sloppy joes from scratch tonight. I will serve on Martin's potato rolls, my absolute favourites. I'll cut up some carrot sticks to go with.

Chickpeas in Curried Coconut Broth Recipe | MyRecipes.com Mobile

Coconut curry chickpeas. I sauteed the onions and garlic in coconut oil instead, and I will add a few big handfuls of fresh spinach near the end. I also used fire-roasted tomatoes instead of regular. I made a double batch so we'll have plenty for lunch tomorrow.

Hope everyone had a good weekend. Tonight we are having cheesy ham chowder, bacon collard greens, jalapeno cornbread and carrot cake for dessert. I'm still getting used to living in rainy Seattle and I wanted something comforting and hot for dinner.

Stacked roasted vegetable enchiladas. I haven't thought of a side yet so maybe we won't have one.

doesn't have a name but I will grill one big chicken breast and cut in strips. then I will saute onion, garlic, asparagus and mushrooms in butter and EVOO, next make a white sauce with fresh parmesan and half and half and then serve it all over either noodles or pasta or rice. Thinking now rice.
