I made a meatloaf a few days ago that just wasn't up to par. So I'm going to break it down, add Italian sausage, some other goodies and red sauce and then turn the whole thing into a veggie-rich lasagna.
Our oldest daughter's birthday is today and her hubby is out of town, so she is coming over: I let her pick the menu by suggesting: AorB for each course. She choose crab cakes, baked potatoes, roasted asparagus and green salad with blue cheese dressing.

My partner rarely requests something new. Yesterday, he did. He had remembered a dish his childhood housekeeper/cook (long story, he was raised with a professional cook as a nanny) used to make. It was shrimp stuffed with crab imperial. I scoured the internet for the proper recipe and I made it tonight.
First, I found a frozen container of crab meat. It had been hanging around for a while and I thawed it. Mixed it with Old Bay, sautéed onion, bell pepper, celery. Added mayo, egg, worchestershire, Tabasco and a cup of crushed Ritz. Stuffed large butterflied shrimp and baked all for 15 minutes. Served with French potato salad and steamed sugar snap peas.
He is still talking about how good it was. What fun to add a new item into the menu.
