Since it's a cold & rainy (even a bit snowy) morning, I have a pork roast in the oven that will go into a warming Posole for dinner. We'll also have slaw and mushroom & bell pepper quesadillas.
Have some leftover buttermilk from pancakes, so I'll make a new salad dressing.

Tonight we're having ham, red beans and rice, cornbread and collard greens (my Italian husband says this is one of his favorite meals -- I'm the one who is New Orleans born and bred, go figure!)
Stopped at Cava Grill, got a lentil & supergreens bowl with grilled meatballs, baba gahnouj, feta, mint, hummus, tomaatoes and pickled onions, spicy harissa dressing, with a cucumber mint juice to drink. Dang, I'm healthy!
Thai food tonight. Fish cakes, pad Thai, and chicken yellow curry. Thai iced tea.
