Wild rice. And a tomato cucumber salad with honey mustard dressing.

Home made blueberry cobbler.

Here is the recipe for the scallop dish. Personally? I pan fry the scallops until they are browned.Old recipe. Good dish!

3 lbs scallops (I like little ones)
salt and pepper to taste.
4 T Butter
4 T flour.
4 T flour.
1 Tsp salt
1 cup heavy cream.
1 cup half and half.
1/2 cup minced fresh parsley.
1/4 cup sherry.

Brown scallops in butter and olive oil.
Add salt, pepper and mushrooms.
Melt butter over low heat.
Add seasonings and sherry.
Add parsley.
Place in buttered casserole dish
Top with cheese.
Bake in pre-heated oven for 20 minutes.

Enjoy!
That one did me in! Dead, I am.

This looks amazing!

I'm making something simple - grilled prawns and grilled asparagus. Will throw some romaine hearts on the grill to use in a salad with heirloom cherry tomatoes and toasted pine nuts.

That's about it.

Sheena, I am definitely trying that, especially since I have been craving scallops.

Dinner tonight was with my travel chicks group. I had a Caesar salad with grilled shrimp. Stopped at McD's on the way home for a cone.

Son's 40th birthday. At his request we had grilled garlicky wild rice hamburgers topped with bacon and bleu cheese, oven brown potato wedges, chop salad and grilled zucchini.

Instead of cake we had ice cream mud pie made with Oreo crust, mint chocolate chip ice cream, a layer of hot fudge and another layer of dark chocolate whipped cream.

Last night we had Egg Plant Parm made from our own garden grown eggplant. So much better than frozen.

I made my own Gyudon-japanese beef bowl with lots of onions and extra gravy. Together with a bowl of wakame instant soup. Its so super yummy better than Yoshinoya!
