In a microwave safe bowl, I put:

Three egg whites, half a yolk,
a little cheese (love rattlesnake cheddar, and drunk goat, but any real cheese will do - but just use a little)
2 sliced black olives, a little diced tomato, a few diced scallions
A sprinkle of frozen kale, a handful of frozen peas

Froth it all up

Nuke and check carefully at 1 min and 30 seconds, you don’t want to overcook or undercook, it’s not difficult to do (I can do it, after all!)

Add salt, pepper to taste, 1/3 cubed avocado, and sometimes a few leaves of snipped up arugula.
It’s really easy. Took longer to write out than to make. : )

Maple bacon. Mmm mmm. Makes the house smell awesome!!
Made some sausage patties …

Coffee. With salted caramel flavoring ( no sugar/carbs) and heavy whipping cream
Frothed up ..

Watching hummingbirds out the window at the feeder .. cute little birds to watch
But don’t they bicker at each other.!!

Avocado toast using rye bread with sliced tomato on top. Also had a plum and hot coffee to drink.
