Good the red color is not Blood. But I still want my steak cooked well done.

While many of us love munching on a medium-rare, juicy steak, others balk at the idea of it.

Admittedly, seeing blood-like liquid oozing out of the meat when you cut into it isn’t always the most appetizing of sights.

It's appealing to me. If I want beef jerky I'll buy it at the neighborhood convenience store.

Myoglobin, we've discussed this before in the food forum. Delicious stuff, no doubt. It's what makes a prime rib a work of art.

I seem to recall being excited about "drinking blood" while eating a rare steak when I was a kid and my mom telling me it was not actually blood. Disappointment... :-)

It is good stuff, though. I love 'juicing up' my bites of rare steak in a salty pool of myoglobin.

its not blood....

muscle/meat is 77% moisture
its mostly water


personally I like the juices...

no different than a roast and using the drippings for gravy


and yes I like my steaks medium rare....


when you "dry" a steak,,,the optimum time is 28 days.... flavors concentrate with less moisture.



I don't get why so many people are squeamish to see a little juice.....

ive seen mothers change runny diapers but get "grossed out" by a little juice..
I guess its a first world luxury- as my grandmother use to tell my sister,,,,you are lucky young lady, when I was your age I use to prep and dress chickens to cook with my mother. and that included killing the chicken




that juice is also flavor, I try to capture it...either from roasts, bacon, chicken and store for future cooking,,,its great in stuffings and also slow cooker flavorings cooking just about anything

juicing up ...thanks for a chuckle,, brings back an old high school memory

during one Halloween... the high school put on one of those spooky scary Halloween fundraisers
the boosters club was in charge so they recruited me as part of the football jocks..

we created a "carrie" room..... where it looked like blood was being poured on this girl.....and we also had squirt guns filled with fake pig/cow blood and squirting the kids coming thru..

I supersoaked my English teacher..... she screamed. we had a fun night !!!

well I have been eating my meat rare since I was a child and so far, I am just fine. I will continue to do so. Yes, there are those who want their meat well done and this is just fine. I can't imagine eating steak or a quality roast any other way than rare: cheap cuts of meat< that is a different story.
