I’ve been around awhile, and thought I’d heard of most everything, so I was shocked to see two foods I have never heard of. It was on the show “State Plates”. Taylor Hicks goes to each state and chooses a meal comprised of foods the state is famous for. Today was NY. Both things sounded good, so I wonder why they aren’t well known?
The plate consisted of Delmonico steak, Waldorf salad, SALT POTATOES, and UTICA GREENS.
Never heard of either of the last 2 items.
FYI, salt potatoes are new potatoes, boiled, skin on, with a ton of salt in the water. Then they are drained and served with melted butter. Companies even sell salt potatoes in bags with a bag of salt inside.
Utica greens are escarole and other lettuces, parboiled, drained and mixed with garlic, pepperoni, and a few other things, sautéed in butter, with fresh mozzarella cheese, and baked in a casserole.
I’m posting a recipe (in recipes) for Utica greens. There are several online. I could not find one like the one I saw, which used fresh mozzarella instead of Parmesan or Romano, but I guess you can improvise.
Salt potatoes are awesome. And easy. I don't have a recipe, I just put a load of kosher salt in and boil as normal.
If the parts of the pot above the water line and the stove top are not spattered with salt rime, you are not using enough salt.
The potatoes can only accept a certain amount of salt as it doesn't really soak in, it just creates a super fine layer of salt on the skin, so they won't get too salty (unless you are super sensitive to salt in which case something called 'salt potatoes' shouldn't be on your menu :-)
Then you just serve them with a ramekin or two of melted butter to dip them in.
delmonico steak is another name for rib eye steak.....tho ive heard a restaurant in nyc called delmonicos …. made this popular 100 yrs ago
in some places even the chuck eye steak is called chuck delmonicos ( two steaks where the chuck meets the rib)
Delmonico's steakhouse has been a New York City institution forever. Opened in 1837. If you ever read Caleb Carr's novel, The Alienist, which takes place in 1896 New York City, the main characters meet several times at Delmonico's.
I ate there once, about a year ago. What was funny was that I didn't eat meat and of the other three people I had lunch with, one was Jewish and two were Muslim, so they couldn't eat the meat because it was neither kosher nor halal. So, there we were, four people at one of the most famous steakhouses ever, and we all had fish. It was excellent, by the way. I had haddock.
He left out beef on weck, chicken spiedies, and no Buffalo wings? I miss NYS and NYC food.
