I think you are right about Atlantic versus Pacific but I will get either, depending on the cost more than anything. We eat a lot of fish, especially Salmon. Actually we also love rainbow trout and can hardly tell the difference between that and Salmon

Trout and salmon are in the same family, the Salmonids. Steelhead trout and (most) Lake Trout are very similar to salmon and make good eating, too.

I do some flyfishing in the upper tributaries of the Rio Grande and Chama rivers for Rainbows, Browns, and Rio Grande Cuthroats and Brookies!. Mmmm. All together, my favorite family of fish.

It's the Atlantic Salmon, Salmo Salar. Not the same as King or Sockeye.

I wouldn't doubt it's tasty though.

There's way too much greasy fat and not enough firmness or flavour for my liking in farmed Atlantic salmon. I've never had wild Atlantic salmon so I don't know how it compares with the farmed.

Pacific Sockeye is just okay by me, a bit too dry and strong flavoured for me sometimes but I do not find it 'gamey'. My first preference is wild steelhead trout, then coho, chinook and pink salmon. I like wild rainbow trout too, I'm not keen on the farmed rainbows as they have less flavour, firmness and colour than the wild.

I've caught wild sockeye salmon, then cooked it within 5 hours of it leaving the water. IMO there is no better tasting salmon than fresh sockeye.

If you want to enjoy a true culinary treat, smoke some sockeye salmon bellies. It tastes like candy.

Sockeye or coho.

I don't buy the Atlantic farmed salmon for the same reasons other people have already stated.

Norwegian cold Atlantic salmon is tasty. As mentioned in a previous post, they are not confined to small tanks. They actually live in the ocean.

I prefer sockeye, particularly either fresh or flash frozen, but stuff like this https://www.bakkafrost.com/ is also very tasty. It's also much safer to use if eating raw.

Wild Atlantic Salmon taste less fatty, they are usually not as big and thick. King Salmon has the softest flesh and the fats lined in the flesh so it is blended perfectly. If you cook it, it's great. But when it is raw and sliced with cream cheese it taste so delicate. The farmed salmon texture is more rubbery in comparison and the flavor is less. Probably a lot of people don't like wild salmon because the fish taste is more intense but the texture is the main difference. Farmed salmon cooked is not as tender as wild due to the fat content.
