Grilled Octopus Salad.

The octopus is already cooked, from Costco, but I'll marinate it in olive oil, garlic and lemon for a few hours. Then grill it on hot so it gets a little char. I'll then chop it into bite-sized pieces and mix it up with red onion, tomato, cubed boiled potatoes, fresh parsley. Then toss that all with olive oil, white vinegar, salt and pepper, and place it on a bed of chopped romaine lettuce. I ate this several times when we were in Croatia and was so happy to see that Costco carries the already cooked octopus as I hate cooking raw octopus. It's a bit creepy.

Yesterday's.

I seasoned and marinated some flank steak, grilled it along with some red bell peppers, poblano, onions, and jalapenos. Made carne asada tacos out of it and served it along with some Spanish rice.

Careful, it goes from cooked to seafood chewing gum in nothing flat.

Tonight will be the other half of our poke bowls from lunch.

I took some previously cooked brisket out of the freezer and we’ll have cole slaw, beans and cornbread with that tonight.
