One company I worked at a long time ago, my supervisor brought me and my co-workers some traditional Mexican candies for Cinco de Mayo. She said she got them from a panaderia, or Mexican bakery. I'm specifically craving two kinds:
This is biznaga, made from cactus pulp.
This is camote, made from sweet potatoes with a brown sugar glaze.

I don't have a recipe and you'd never catch me even trying to make it, but -- and you're going to think I'm totally kidding you -- but if you have a Costco near you, you'll see a box of them in the frozen section. they're in cute little triangles. You'll think it's a waste of money, that they can't possibly be any good, but you'll be wrong -- they're delicious. Oh, and I think it says that you can't -- or shouldn't -- microwave them either, but they're wrong. You can... and they're just as good as when you make them in the oven.
