If you want to copy Pace picante, use canned tomato puree as a base. If you want to add garlic and cilantro, use very sparingly, they can overpower the sauce.

Pace uses different jalapeno varieties for different heat levels. At home, you can adjust the heat by the amount of seeds you leave in (that's where a lot of the heat is).

If I am in a hurry and just crave something to eat with some tortilla chips I mix sour cream with salsa. Ideally, you want to go with hotter salsa than you usually like, since the sour cream cools it down. Start with about a half jar of salsa and mix in bout a cup of the sour cream until it's the consistency and hotness you like. If you only have mild or medium salsa you can add a little cayenne pepper.
