All of the delicious Thanksgiving food is gone, but Sunday dinner tonight was delicious. Meatloaf, steamed broccoli, baked potatoes, dinner rolls and sweet tea. This was especially good after raking pine straw and making three straw "islands" around the shrubbery this afternoon. Too full for dessert right now -- after the Amazing Race it will be chocolate eclairs and decaf coffee.

I made Split Chicken Breasts w/Panko, Parmesan cheese and garlic. Made baked yams and a frozen veggie.

Tonight I'm going to do white beans with wilted spinach. That's the base concept. It hasn't quite come into tight focus yet, but that's where I'm starting.

It would be nice with seared scallops I think, but I don't have any scallops.

I bought 8lbs of pork spare ribs to cook this past weekend.

Brined them overnight, trimmed off the connective tissue, dried them with paper towels, and coated them with a nice rub I made with paprika and cumin. Cooked them on Sunday, from 10am to 5pm, wrapped in aluminum foil at about 180 degrees. Towards the end I slathered them up with some Maurice's mustard-based BBQ sauce.

served with snow peas + red onions + broccoli + soy sauce, thrown together in the skillet.
